Chef Jerome was born in Bordeaux area,
France, and rich in the culinary experience of different style, among which he
devote much enthusiasm into French, Italian, and Mediterranean cuisines. The
latest items on TIVANO’s spring & summer menu were inspired by the Mediterranean cuisine – the new dishes feature the Italian
Mediterranean style, and are decorated with fresh organic vegetables and
seasonal ingredients. The highlights include: Antipasti Platter, Melanzane alla
Parmigiana, Sichuanella Pizza, and Piatto
di Mare.
Antipasti Platter This dish is largely
influence by Mediterranean style sharing spreads. It is a little corner of the
Italian taste, with the homemade Carta Musica bread (Carassau from Sardinia), a
perfect match with this kind of appetizer and spreads.
Melanzane alla Parmigiana This dish is
definitely a must have on a classic Italian restaurant. We twist the original
recipe using Polenta as the crust for the Eggplant and Buffalo Mozzarella to
bring real comfort to this very traditional rendez-vous.
Sichuanella Pizza This is a new creation,
we reinterpreted the classic Salami Picante Pizza from Italy, replace the
Italian sausage with the Sichuan local specialty sausage and the smoked pork to
bring a smoky feeling to the dish. In addition we have pickle chilies, fresh
garlic and basil that bring a special balance visually and culinary speaking.
Piatto di Mare Every classic Italian
restaurant has their fish platter, although far from any sea shores, we managed
to regroup a fresh and interesting variety of fish and seafood that come very
close to the Italian standards. Three special Mediterranean Style sauces come
to enhance the vibrant selection of seafood
